Tomato Parmesan Soup

I'm typically not a fan of recipes that require a lot of care and maintenance. If food takes longer than 30 minutes from the time I pull out the ingredients to the time I shove it into my mouth, count me out. (with exception of the crockpot, of course!)

I wanted to try something different for dinner this evening and even though it require a bit more work than I'm used to, it was DELICIOUS!

I dislike tomato soup. Whether it's out of a Campbell's can or an uppity Tomato Bisque, I've never cared for it.

I decided to make this for the family and I enjoyed it even more than they did.

The tomato taste is present, but the parmesan and basil dominate the flavor of the soup.
